Millenium Institute for Integrative Biology

The laboratory is dedicated to the study of the natural variation of yeasts, particularly in ethanol-tolerant species from the forests of southern and central Chile, with the aim of identifying the genetic variants underlying the phenotypic differences between isolates for beer fermentation (and also for wine, mead, cider, whiskey and any other type of fermentation). The laboratory seeks to obtain new isolates suitable for the fermentation industry.
