Esta tecnolog\u00eda se encuentra con patente concedida en Chile y en tr\u00e1mite en Estados Unidos, India, Canad\u00e1 y Brasil, proceso que es apoyado por la Direcci\u00f3n de Gesti\u00f3n Tecnol\u00f3gica de la Vridei.<\/b><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-inner-column elementor-element elementor-element-13a97f32\" data-id=\"13a97f32\" data-element_type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-382bbf73 elementor-widget elementor-widget-text-editor\" data-id=\"382bbf73\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"font-weight: 400;\">El <\/span><span style=\"font-weight: 400;\">pan ocupa el <strong>segundo lugar entre los alimentos que m\u00e1s se consumen<\/strong> en los hogares de nuestro pa\u00eds, donde las bebidas azucaradas encabezan las preferencias de las familias. As\u00ed lo revela el estudio \u201c<\/span><a href=\"http:\/\/eligevivirsano.gob.cl\/wp-content\/uploads\/2021\/04\/20210405-Radiografi%CC%81a-de-Alimentacio%CC%81n-en-Chile.pdf\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Radiograf\u00eda de la Alimentaci\u00f3n en Chile\u201d<\/span><\/a><span style=\"font-weight: 400;\">, realizado en 2021, en el marco del programa <strong>\u201cElige Vivir Sano\u201d<\/strong>, impulsado por el Gobierno.\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">Adem\u00e1s del alto consumo de este producto, en los \u00faltimos a\u00f1os tambi\u00e9n han surgido una gran variedad de panes que se ofrecen en el mercado y que son cada d\u00eda m\u00e1s demandados por los consumidores. Por lo mismo, los fabricantes y productores han estado atentos a nuevas alternativas que permitan potenciar sus propiedades, y mejorar la calidad de la masa.<\/span><\/p><p><span style=\"font-weight: 400;\">Para abordar estos desaf\u00edos, un equipo de investigaci\u00f3n de la Universidad de Santiago de Chile, liderado por el <strong>Dr. Renato Ch\u00e1vez<\/strong>, acad\u00e9mico e investigador de la Facultad de Qu\u00edmica y Biolog\u00eda, y el <strong>Dr. Carlos Gil<\/strong>, graduado del Doctorado en Biotecnolog\u00eda de la misma Facultad, <\/span><b>desarrollaron un nuevo polip\u00e9ptido con actividad xilanasa, para mejorar los productos derivados de la industria alimenticia y en particular, aquellos de la industria panadera. <\/b><span style=\"font-weight: 400;\">Este fue resultado directo de la tesis que realiz\u00f3 el Dr. Gil durante su permanencia en el Doctorado.<\/span><\/p><p><span style=\"font-weight: 400;\">Al respecto, el <strong>Dr. Renato Ch\u00e1vez<\/strong> aclara que \u201c<\/span><i><span style=\"font-weight: 400;\">las xilanasas son un grupo amplio de enzimas que degradan polisac\u00e1ridos compuestos de xilano y que se clasifican en diferentes tipos de acuerdo con sus propiedades fisicoqu\u00edmicas. Entre estas se encuentran las endoxilanasas, las que son muy utilizadas en la fabricaci\u00f3n de pan y cerveza, en la extracci\u00f3n de almid\u00f3n, caf\u00e9 y aceites vegetales; y en otros procesos relacionados con el rubro alimenticio\u201d.<\/span><\/i><\/p><p><span style=\"font-weight: 400;\">Asimismo, enfatiza que las endoxilanasas son muy requeridas en el sector panadero, pues ayudan a <\/span><i><span style=\"font-weight: 400;\">\u201cmejorar una serie de caracter\u00edsticas en los productos como la estabilidad y desarrollo de la masa, el volumen del pan, y la firmeza de la miga, entre otros\u201d.<\/span><\/i><\/p><p><span style=\"font-weight: 400;\">En ese contexto, explica que el desarrollo del\u00a0 nuevo polip\u00e9ptido, al agregarlo a las mezclas, <\/span><i><span style=\"font-weight: 400;\">\u201cpermite que las masas tengan una mejor elasticidad y menor tenacidad, pudiendo obtener un producto final de mayor volumen, en comparaci\u00f3n con aquellos en que se usan polip\u00e9ptidos con actividad xilanasa tradicionales disponibles en el mercado\u201d.<\/span><\/i><\/p><p><span style=\"font-weight: 400;\">En la actualidad, esta <\/span><b>tecnolog\u00eda Usach se encuentra con patente concedida en Chile, y en tr\u00e1mite en Estados Unidos, India, Canad\u00e1 y Brasil.
