La propuesta es financiada por la ANID, ejecutada en conjunto con la Universidad de Chile y el Centro de Estudios Avanzados en Zonas \u00c1ridas, y cuenta con el apoyo de la Direcci\u00f3n de Gesti\u00f3n Tecnol\u00f3gica de la Vicerrector\u00eda de Investigaci\u00f3n, Innovaci\u00f3n y Creaci\u00f3n.<\/b><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-4eb748de elementor-widget elementor-widget-text-editor\" data-id=\"4eb748de\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<div class=\"field field-name-post-date field-type-ds field-label-hidden\"><div class=\"field-items\"><div class=\"field-item even\"><p><span style=\"font-weight: 400;\">Chile es reconocido a nivel mundial por su alta producci\u00f3n de vinos, pisco y pan, cuya elaboraci\u00f3n depende, en gran medida, del uso de levaduras importadas. Frente a este escenario, resulta clave avanzar en el fortalecimiento de capacidades cient\u00edficas y tecnol\u00f3gicas que permitan generar soluciones locales y reducir la dependencia productiva externa.<\/span><\/p><p><span style=\"font-weight: 400;\">En respuesta a estos desaf\u00edos la<\/span><a href=\"https:\/\/portal.usach.cl\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\"> Universidad de Santiago de Chile<\/span><\/a><span style=\"font-weight: 400;\"> (Usach), a trav\u00e9s de sus departamentos acad\u00e9micos y centros de investigaci\u00f3n, ha consolidado una l\u00ednea de trabajo en torno al estudio y aplicaci\u00f3n de estos microorganismos, contribuyendo a la innovaci\u00f3n y la competitividad del sector a nivel nacional.<\/span><\/p><p><b>Como parte de este trabajo, se puso en marcha el proyecto de I+D <\/b><b><i>\u201cA new platform for the diversification and sustainability of the yeast biotechnology industry in Chile\u201d<\/i><\/b><b>, recientemente adjudicado en el Concurso Anillo Regular de Tecnolog\u00eda 2025. La ejecuci\u00f3n es liderada por el Dr. Claudio Mart\u00ednez, acad\u00e9mico del <a href=\"https:\/\/www.factec.usach.cl\/departamento-de-ciencia-y-tecnologia-de-los-alimentos\" target=\"_blank\" rel=\"noopener\">D<\/a><\/b><b>epartamento de Ciencia y Tecnolog\u00eda de Alimentos<\/b><b> y director del <\/b><a href=\"https:\/\/vriic.usach.cl\/index.php\/unidad-de-id-cecta\/\" target=\"_blank\" rel=\"noopener\"><b>CECTA Usach<\/b><\/a><b>, junto a un equipo interdisciplinario de investigadoras e investigadores que aportan su experiencia en \u00e1reas como microbiolog\u00eda, gen\u00e9tica y bioinform\u00e1tica.<\/b><\/p><p><i><span style=\"font-weight: 400;\">\u201cNuestro prop\u00f3sito es desarrollar una plataforma de estudio b\u00e1sico y aplicado para la generaci\u00f3n de nuevas cepas de levaduras que respondan a las necesidades de distintas industrias biotecnol\u00f3gicas y que, a su vez, contribuya a fortalecer el sector productor para que pueda proveer productos innovadores a la industria local y global\u201d,<\/span><\/i><span style=\"font-weight: 400;\"> explica el Dr. Claudio Mart\u00ednez.<\/span><\/p><h2>\u00a0<\/h2><h2><b>Continuidad cient\u00edfica y enfoque aplicado<\/b><\/h2><p>\u00a0<\/p><p><span style=\"font-weight: 400;\">De acuerdo con el acad\u00e9mico, la propuesta ampl\u00eda y da continuidad a una l\u00ednea de investigaci\u00f3n desarrollada por m\u00e1s de dos d\u00e9cadas en la Universidad de Santiago. <\/span><i><span style=\"font-weight: 400;\">\u201cHemos avanzado desde estudios m\u00e1s b\u00e1sicos sobre la diversidad de las levaduras hacia proyectos cada vez m\u00e1s aplicados, con participaci\u00f3n de empresas y enfocados en mejorar la productividad\u201d<\/span><\/i><span style=\"font-weight: 400;\">, se\u00f1ala.<\/span><\/p><p><b>En cuanto a la metodolog\u00eda, detalla que, \u201c<\/b><b><i>en la primera etapa, se levantar\u00e1 una plataforma que integrar\u00e1 una base de datos compuesta por al menos 100 cepas provenientes de distintas zonas del mundo, lo que permitir\u00e1 caracterizar su diversidad gen\u00e9tica. A partir de esta informaci\u00f3n, la segunda fase estar\u00e1 orientada a la selecci\u00f3n y obtenci\u00f3n de cepas espec\u00edficas para su uso en procesos productivos, principalmente en los sectores vitivin\u00edcola y acu\u00edcola\u201d<\/i><\/b><b>.<\/b><\/p><p><span style=\"font-weight: 400;\">En el \u00e1mbito de la producci\u00f3n de vinos, y sobre la base de resultados obtenidos en estudios anteriores, el equipo ya se encuentra en una etapa de validaci\u00f3n piloto de cepas mejoradas, con un nivel de madurez tecnol\u00f3gica cercano a TRL 5, proyectando su avance hacia fases de mayor escalamiento industrial.<\/span><\/p><p><span style=\"font-weight: 400;\">Este trabajo tambi\u00e9n permitir\u00e1 abrir una nueva l\u00ednea aplicada en alimentaci\u00f3n animal. En particular, se estudiar\u00e1 el uso de componentes de la pared celular de esos microorganismos para inducir respuestas inmunes en peces, lo que podr\u00eda contribuir a fortalecer sus defensas naturales y a reducir el uso de antibi\u00f3ticos.<\/span><\/p><p>\u00a0<\/p><h2><b>Proyecci\u00f3n e impacto esperados<\/b><\/h2><p>\u00a0<\/p><p><span style=\"font-weight: 400;\">Entre los impactos relevantes que considera la propuesta, se encuentra la formaci\u00f3n de capital humano avanzado, a trav\u00e9s de la participaci\u00f3n de estudiantes de los programas de doctorado de la Usach en Ciencia y Tecnolog\u00eda en Alimentos, y en Microbiolog\u00eda, as\u00ed como la generaci\u00f3n de oportunidades para el desarrollo de tesis de pregrado.<\/span><\/p><p><b>Al finalizar la investigaci\u00f3n, <\/b><b><i>\u201cesperamos contar con nuevas cepas de levaduras y capacidades piloto para su escalamiento industrial en Chile, abriendo oportunidades de desarrollo en \u00e1reas como la alimentaci\u00f3n, la agricultura, la acuicultura y la industria farmac\u00e9utica\u201d<\/i><\/b><b>, afirma.<\/b><\/p><p><span style=\"font-weight: 400;\">Finalmente, el acad\u00e9mico puntualiza que a futuro, esta plataforma podr\u00eda convertirse en un motor para el surgimiento de nuevos emprendimientos y negocios de base biotecnol\u00f3gica, capaces de ofrecer soluciones
