Esta tecnolog\u00eda cuenta con solicitud de patente, tramitaci\u00f3n apoyada por la Direcci\u00f3n de Gesti\u00f3n Tecnol\u00f3gica de la Vriic.<\/b><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-25783c38 elementor-widget elementor-widget-text-editor\" data-id=\"25783c38\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"font-weight: 400;\">El mercado de carne ha ido en alza en el \u00faltimo tiempo. Se estima que entre 2024 y 2029 crecer\u00e1 a una tasa del 5,52%, pasando de los US$ 487.460 millones que se esperan para este a\u00f1o,\u00a0 a los US$ 637.700 millones en 2029. As\u00ed lo revela una <\/span><a href=\"https:\/\/www.mordorintelligence.com\/industry-reports\/global-live-stock-and-meat-market-industry\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">publicaci\u00f3n <\/span><\/a><span style=\"font-weight: 400;\">de la plataforma de investigaci\u00f3n de mercado Mordor Intelligence.<\/span><\/p><p><span style=\"font-weight: 400;\">En la comercializaci\u00f3n de los productos como la res, pollo, cordero y cerdo, entre otros m\u00e1s, resulta clave el uso de envases para su almacenamiento y conservaci\u00f3n. Es por ello, que con la aplicaci\u00f3n de nuevas tecnolog\u00edas en el envasado, se ha podido aumentar la calidad, inocuidad y vida \u00fatil de esos cortes frescos.<\/span><\/p><p><span style=\"font-weight: 400;\">Asimismo, la producci\u00f3n y fabricaci\u00f3n de envases est\u00e1 tendiendo a ser cada vez m\u00e1s sostenible, favoreciendo su reciclabilidad, recircularidad y la reducci\u00f3n del impacto en el medioambiente, entre otros m\u00e1s. Considerando todas esas tendencias, <strong>investigadoras e investigadores del C<a href=\"https:\/\/www.labenchile.cl\/\" target=\"_blank\" rel=\"noopener\">entro de Innovaci\u00f3n en Empaques y Embalajes Laben Chile<\/a> de la Usach, desarrollaron un packaging activo capaz de prolongar la conservaci\u00f3n de los productos c\u00e1rnicos.\u00a0<\/strong><\/span><\/p><p><span style=\"font-weight: 400;\">Espec\u00edficamente, se realiz\u00f3 una <strong>mejora de la almohadilla o pa\u00f1al, ubicada al interior de las bandejas para el envasado, la cual remueve los exudados de las carnes y genera una atm\u00f3sfera antimicrobiana que permite preservar por m\u00e1s tiempo estos alimentos, bajo condiciones de refrigeraci\u00f3n.<\/strong><\/span><\/p><p><span style=\"font-weight: 400;\">Esta tecnolog\u00eda fue financiada, a trav\u00e9s de un proyecto Fondef IDeA, siendo liderada por el\u00a0 Dr. Francisco Rodr\u00edguez, acad\u00e9mico del Departamento de Ciencia y Tecnolog\u00eda de los Alimentos de la F<a href=\"https:\/\/www.factec.usach.cl\/\" target=\"_blank\" rel=\"noopener\">acultad Tecnol\u00f3gica<\/a>, e investigador de Laben Chile. Tambi\u00e9n participaron las y los investigadores de este centro de innovaci\u00f3n, Dra. Mar\u00eda Jos\u00e9 Galotto, Dr. Julio Bruna, Dra. Andrea Tapia, Dra. Ver\u00f3nica Garc\u00eda y la Mg. Ximena Valenzuela. Adicionalmente, colaboraron las empresas Comercial Celtex y laboratorios internacionales de cosm\u00e9ticos.\u00a0\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">Respecto a esta innovaci\u00f3n, el Dr. Francisco Rodr\u00edguez explica que \u201c<\/span><i><span style=\"font-weight: 400;\">a diferencia de las almohadillas comerciales, las cuales solo se orientan a la remoci\u00f3n de exudados, se cre\u00f3 una almohadilla activa con alta capacidad de absorci\u00f3n de l\u00edquidos por parte del material celul\u00f3sico y que en su interior se ha incorporado un agente activo encapsulado. Dicha almohadilla al entrar en contacto con los exudados facilita la ruptura de la pared de las c\u00e1psulas, que en su interior poseen aceites vol\u00e1tiles de extractos naturales. Al liberarse dichos aceites en fase gaseosa, controlan el crecimiento de los microorganismos responsables de afectar la calidad y vida \u00fatil de las carnes envasadas\u201d<\/span><\/i><span style=\"font-weight: 400;\">.<\/span><\/p><p><span style=\"font-weight: 400;\">El investigador a\u00f1ade que \u201c<\/span><i><span style=\"font-weight: 400;\">a trav\u00e9s de este desarrollo se entrega soluci\u00f3n a una de las grandes problem\u00e1ticas de las industrias de envases y c\u00e1rnica, al extender la vida \u00fatil de las carnes comercializadas en sistema de bandeja y en condiciones de refrigeraci\u00f3n, logrando disminuir la proliferaci\u00f3n de microorganismos pat\u00f3genos y deteriorantes\u201d.<\/span><\/i><\/p><p><span style=\"font-weight: 400;\">Detalla que, e<strong>n pruebas de laboratorio, <\/strong><\/span><strong>se logr\u00f3 aumentar entre un 25% a 30 % la vida \u00fatil de carne de pollo envasado en bandejas,<\/strong><i><span style=\"font-weight: 400;\"> \u201cadapt\u00e1ndose a las diferentes<\/span><\/i><i><span style=\"font-weight: 400;\"> cargas microbiol\u00f3gicas de este producto, el cual se encuentra disponible para su transferencia al mercado.<\/span><\/i> <i><span style=\"font-weight: 400;\">De esta manera, gracias a la extensi\u00f3n de la vida \u00fatil de estos cortes frescos, se\u00a0 reduce considerablemente la merma, mejorando las posibilidades de incrementar por m\u00e1s tiempo su almacenamiento y comercializaci\u00f3n en el mercado\u201d<\/span><\/i><span style=\"font-weight: 400;\">.<\/span><\/p><p><span style=\"font-weight: 400;\">En la actualidad, <strong>esta tecnolog\u00eda Usach se encuentra con solicitud de patente en Chile, tr\u00e1mite que fue apoyado por nuestra Direcci\u00f3n de Gesti\u00f3n
