resultados del proyecto \u201cCepas de levadura con menor eficiencia en la producci\u00f3n de alcohol para la elaboraci\u00f3n de vinos de calidad\u201d, que dirigi\u00f3 el Dr. Claudio Martinez Fern\u00e1ndez, investigador de nuestra Universidad y Director de CECTA.\u00a0<\/b><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-33098b74 elementor-widget elementor-widget-text-editor\" data-id=\"33098b74\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p><span style=\"font-weight: 400;\">La obtenci\u00f3n de levaduras gen\u00e9ticamente mejoradas para producir menos alcohol en los vinos y con la calidad requerida por la industria vitivin\u00edcola, fue parte de los resultados presentados en el seminario de cierre del proyecto Fondef, que lider\u00f3 el <\/span><a href=\"https:\/\/www.factec.usach.cl\/academicos-alimentos\/claudio-martinez-fernandez\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Dr. Claudio Mart\u00ednez Fern\u00e1ndez<\/span><\/a><span style=\"font-weight: 400;\">, investigador Usach y Director del Centro de Estudios en Ciencia y Tecnolog\u00eda de Alimentos (CECTA).<\/span><\/p><p><span style=\"font-weight: 400;\">La actividad se realiz\u00f3 este martes 9 de abril, congregando la participaci\u00f3n de las autoridades de la Usach, el <strong>Dr. Jorge Pavez Irrazabal<\/strong>, <\/span><span style=\"font-weight: 400;\">Vicerrector de Investigaci\u00f3n, Innovaci\u00f3n y Creaci\u00f3n (Vriic)<\/span><span style=\"font-weight: 400;\"> y de <strong>Rodrigo Morgado Contardo<\/strong>, <\/span><span style=\"font-weight: 400;\"><a href=\"https:\/\/dgt.usach.cl\/\" target=\"_blank\" rel=\"noopener\">Director de Gesti\u00f3n Tecnol\u00f3gica<\/a> de la Vriic,<\/span><span style=\"font-weight: 400;\"> as\u00ed como de <strong>Carlos Ladrix Oses<\/strong>, Subdirector de Investigaci\u00f3n Aplicada de la ANID. Tambi\u00e9n asistieron investigadoras e investigadores de nuestro Plantel y representantes del mundo vitivin\u00edcola, entre otros.<\/span><\/p><p><span style=\"font-weight: 400;\">En la oportunidad, el Dr. Claudio Martinez precis\u00f3 que debido al cambio clim\u00e1tico, las altas temperaturas han acelerado m\u00e1s de lo normal <em>\u201cla maduraci\u00f3n de la uvas, increment\u00e1ndose el contenido de az\u00facar en estas y afectando el proceso de fermentaci\u00f3n, donde las levaduras convierten esos az\u00facares en alcohol\u201d<\/em>.\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">Precis\u00f3 que la investigaci\u00f3n busc\u00f3 dar soluci\u00f3n a la alta concentraci\u00f3n de alcohol en los vinos, pues entre otros efectos negativos, disminuye la calidad sensorial deseada en el producto. Para abordar este desaf\u00edo, se propuso obtener <em>\u201ccepas de levaduras <\/em><\/span><em><span style=\"font-weight: 400;\">Saccharomyces cerevisiae<\/span><\/em><span style=\"font-weight: 400;\"><em> que permitieran producir vinos de alta calidad, sin necesidad de intervenciones pre o post fermentativas para regular su contenido de alcohol\u201d<\/em>.<\/span><\/p><p><span style=\"font-weight: 400;\">Tras dos a\u00f1os de trabajo a nivel de laboratorio y pruebas piloto, el equipo de investigaci\u00f3n logr\u00f3, a partir del cruzamientos de 70 levaduras silvestres, <em>\u201cla obtenci\u00f3n de una poblaci\u00f3n de 132 h\u00edbridos gen\u00e9ticamente mejoradas, que potencialmente pueden bajar el grado alcoh\u00f3lico\u201d<\/em>, con un rendimiento en etanol de un 9% menor.\u00a0<\/span><\/p><p><span style=\"font-weight: 400;\">Cabe resaltar, que la metodolog\u00eda desarrollada durante el proyecto se encuentra en proceso de patentamiento, de manera de garantizar su protecci\u00f3n legal.<\/span><\/p><h2><b>Investigaci\u00f3n con triple impacto en la industria<\/b><\/h2><p><span style=\"font-weight: 400;\">Para\u00a0 la ejecuci\u00f3n del proyecto \u201cCepas de levadura con menor eficiencia en la producci\u00f3n de alcohol para la elaboraci\u00f3n de vinos de calidad\u201d se cont\u00f3 con financiamiento de <\/span><a href=\"https:\/\/anid.cl\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">ANID<\/span><\/a><span style=\"font-weight: 400;\"> y\u00a0 la colaboraci\u00f3n de la <\/span><a href=\"https:\/\/www.enologo.cl\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Asociaci\u00f3n Nacional de Ingenieros Agr\u00f3nomos En\u00f3logos (ANIAE) <\/span><\/a><span style=\"font-weight: 400;\">y las empresas <\/span><a href=\"https:\/\/www.lallemand.com\/en\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Lallemand<\/span><\/a><span style=\"font-weight: 400;\"> Inc Chile, <\/span><a href=\"https:\/\/www.casasilva.cl\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Vi\u00f1a Casa Silva<\/span><\/a><span style=\"font-weight: 400;\">, <\/span><a href=\"https:\/\/www.instagram.com\/vinacasaacosta\/?hl=es\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">Vi\u00f1a Casa Acosta<\/span><\/a><span style=\"font-weight: 400;\"> y <\/span><a href=\"https:\/\/rrwine.cl\/\" target=\"_blank\" rel=\"noopener\"><span style=\"font-weight: 400;\">RR Wine<\/span><\/a><span style=\"font-weight: 400;\"> Ltda. Tambi\u00e9n, recibi\u00f3\u00a0 el apoyo de la Vriic, a trav\u00e9s de su Direcci\u00f3n de Gesti\u00f3n Tecnol\u00f3gica.<\/span><\/p><p><span style=\"font-weight: 400;\">En ese contexto, el Vicerrector <strong>Dr. Jorge P\u00e1vez<\/strong>, felicit\u00f3 al investigador por el trabajo y logros conseguidos, resaltando que este tipo de iniciativas <em>\u201crepresentan los prop\u00f3sitos que como Universidad perseguimos, pues la investigaci\u00f3n y la innovaci\u00f3n son pilares fundamentales en nuestro quehacer\u201d<\/em>.<\/span><\/p><p><span style=\"font-weight: 400;\">Agreg\u00f3 que <em>\u201csin duda, estamos ante un valioso proyecto de investigaci\u00f3n I+D con sello Usach, orientado a generar impacto social, econ\u00f3mico y medioambiental. Por lo mismo, estoy seguro que el trabajo liderado por el Dr. Claudio Mart\u00ednez est\u00e1 contribuyendo enormemente al desarrollo, innovaci\u00f3n y avance de las empresas asociadas a esta investigaci\u00f3n, pero tambi\u00e9n aporta a la industria vitivin\u00edcola, una de las m\u00e1s importantes en el pa\u00eds\u201d<\/em>.<\/span><\/p><p><span style=\"font-weight: 400;\">Por su parte, <strong>Carlos Ladrix Oses<\/strong>, Subdirector de Investigaci\u00f3n Aplicada de la ANID, coment\u00f3 que la <em>\u201cUniversidad de Santiago siempre ha sido un excelente usuario de nuestros instrumentos, justamente por su aplicaci\u00f3n con la industria\u201d<\/em>, en donde adem\u00e1s destac\u00f3 el trabajo que se ha ejecutado en investigaci\u00f3n aplicada y transferencia tecnol\u00f3gica en nuestro Plantel.<\/span><\/p><p><span style=\"font-weight: 400;\">Luego de estas presentaciones, el encuentro culmin\u00f3 con\u00a0 la charla \u201cHistoria \u00e9pica del vino chileno\u201d, a cargo del <strong>Dr. Pablo Lacoste<\/strong>, acad\u00e9mico e investigador Usach, quien ha explorado entre sus l\u00edneas investigativas \u00a0 tem\u00e1ticas asociadas a la\u00a0 industria vitivin\u00edcola latinoamericana. Durante su intervenci\u00f3n, se refiri\u00f3\u00a0 a la evoluci\u00f3n en el consumo, producci\u00f3n\u00a0 y comercializaci\u00f3n del vino nacional, desde los tiempos de la Colonia hasta nuestros
